As the solution heats up, the water starts to evaporate, leaving the salt behind. Once the saturation point is reached, any additional salt will start to form solid crystals. These crystals will continue to grow as more and more salt molecules join them. In salt pans or salt mines, water is evaporated from brine to leave behind salt crystals. These are then collected, processed, and sold. In the laboratory, crystallisation is also used to purify substances, as impurities are often left behind in the solution while the desired substance forms crystals.
