The digestion of lipids begins in the mouth, where the enzyme lingual lipase starts to break down the lipid molecules. However, the majority of lipid digestion occurs in the small intestine. Here, the process is facilitated by bile, a substance produced by the liver and stored in the gallbladder. Bile acts as an emulsifier, breaking down large fat globules into smaller droplets, thereby increasing the surface area for the action of enzymes. This process is known as emulsification.
The pancreas secretes an enzyme called pancreatic lipase into the small intestine. This enzyme breaks down the lipids into their constituent parts: glycerol and fatty acids. This process is known as hydrolysis. The resulting molecules are small enough to be absorbed by the cells lining the small intestine, known as enterocytes.
The enterocytes absorb the glycerol and fatty acids, reassemble them into triglycerides, and package them with proteins into particles called chylomicrons. These chylomicrons are then released into the lymphatic system, which eventually drains into the bloodstream. Once in the bloodstream, the lipids can be transported to cells throughout the body where they can be used for energy, stored for later use, or used in the construction of cell membranes and other structures.
