What are the properties of carboxylic acids?

Carboxylic acids also have a distinctive pungent smell. This is most noticeable in short-chain carboxylic acids like formic and acetic acid. As the chain length increases, the smell becomes less pungent and more waxy or cheesy. This is because longer chains have more nonpolar carbon atoms, which makes the overall molecule less polar and therefore less volatile (less likely to evaporate and enter the nose).

In terms of reactivity, carboxylic acids can undergo a variety of reactions. They can react with alcohols to form esters, a type of compound used in perfumes and flavourings. They can also react with bases to form salts, which are often used in soaps and detergents. Finally, they can undergo reduction reactions to form aldehydes and alcohols. This wide range of reactivity makes carboxylic acids important in many areas of chemistry and industry.
